Last night at dinner we experienced a monumental moment: Lisa actually asked for MORE. None of the "Just one more bite and then you're done" nonsense that usually characterizes our meal times. She just chowed down and then asked for more! Ahhh...success. I actually made her repeat herself and then gave her a big hug and kiss. Funny thing too is that I was running low on the usual ingredients I keep around, so I had to get a little creative. The end result was a chicken and rice dish, with sauteed carrots, onions and red bell pepper. The rice was from a "Near East" box...the garlic chicken flavor. Just to make sure the chicken and veggies weren't dry on the rice, I made a little white sauce in the pan after I sauteed the red bell peppers. Usually when I try to just throw things together without a recipe it doesn't turn out that well, so it was fun to have it work this time. I'll definitely make this one again!

Funny....the little things that bring us such joy! Maybe she is going through a growing spurt...I am sure your dinner was delicious. I miss her.
